Calming, Coastal Lemon-Herb Cod & Orzo

A soothing serve of lemony cod over silky, herby orzo. Light, calming & balanced 

Ingredients

1 Fillet of cod (or Seabass)

2 Tsp of Olive oil

Zest of 1/2 a lemon & juice

Pinch of dried oregano

Pinch of garlic granuales

80g of Orzo

240ml of Vegetable stock

1 Tbsp of chopped parsley

A splash of Catalyse Acqua - For extra zen

Baby spinach or rocket

A handful of sliced black olives

Preparation

1. Place the fish in a small dish, coat with olive oil, lemon juice & zest, oregano, garlic, salt & pepper

2. Add the orzo & stock to a small saucepan. Simmer for 8-10 minutes until soft - stir occasionally

3. Stir in the parsley, lemon juice, olive oil & salt. Fold in the green leaves until they wilt. Add in a splash of Acqua

4. Heat a non stick pan on medium, cook the fish for 3-4 minutes on each side until flaky

5. Add orzo to a bowl, sprinkle over the sliced olives, place the fish on top & finish with parsley & a wedge of lemon

6. Serve with your Acqua & Enjoy!
