Zesty Toasted Mint Tofu & Quinoa

A bright & refreshing bowl, layered clean, zesty ingredients, perfect for a mid week, sensory boost

Ingredients

70g of Quinoa

180ml of Water

1 Tbsp of olive oil

1/2 a Courgette

1/2 a Red pepper

80g of Tofu

A handful of mint

Zest of half a lemon & juice

Pinch of chilli flakes

1 Tbsp of roasted seeds

Preparation

1. Add the Quinoa, hot water & a pinch of salt to a pan. Simmer until fluffy - about 12 minutes

2. Heat 1/2 tbsp of olive oil in a pan. Add the chopped mint & lemon zest. Sizzle for 30-60 seconds until fragrant, set aside

3. In the same pan add the other 1/2 of olive oil, add the vegtetables & tofu, season, add the chilli & fry until golden (6-8 minutes)

4. Stir the toasted mint mixture & lemon juice through the quinoa. Top with the veggies & tofu, finish with roasted seeds
